I didn't follow the recipe closely just because I was using what I had on hand, but the method worked perfectly. I used a slightly smaller pan, but then made the mistake of using all of the sugar syrup, so they were a bit too syrupy at the bottom. Other than that, they were absolutely perfect. I didn't have the rosewater or orange blossom water, so put a bit of fresh orange juice and zest into the syrup. I used cashews and pecans, used brown sugar instead of white sugar in the filling, and added some ground ginger to the filling as well. Excellent, crisp, not-too-sweet baklava, and it took just a few minutes to put together once the ghee and syrup were made. In the syrup I used quite a bit of vanilla (omitting the lemon juice and cinnamon and cutting back on the rose water and orange flower water) and a dash of almond extract (I think amaretto would have been delicious but I was out). Anyway, the combination was WONDERFUL and I highly recommend it as a variation. Oh, and I halved the recipe and it worked perfectly. That's the ease ...Jen- no, no brushing is required! That's the ease of the recipe. You make up for it by pouring on a boatload of butter :-)<BR/><BR/>Robin- I use unsalted butter. Actually, I usually use good quality samne, a kind of middle eastern clarified butter like ghee, which enables me to skip the clarifying step.<BR/><BR/>Helen- I noted that this didn't work as well for me with the rolled shape. To hedge your bets I'd suggest brushing at least three layers, then pouring butter over top. You definitely don't have to brush every layer though.
