I ate the corn - it was good, but I would not go out of my way for corn on the cob. <br />Then one day, in a land far away, a friend delivered a couple of ears of corn for me and my recuperating mother. <br />Late that night and suspicious of that "foreign" corn, I decided to taste it raw before I boiled a pan of water. <br />Oh MY! Oh MY! It was so good I ate both ears standing up over the sink! Raw corn was an epiphany and I have rarely eaten it cooked since. cut 6 or 7 corn cobs in 3...my favorite corn recipe<br /><br />cut 6 or 7 corn cobs in 3 cm bite size chunks with a big kitchen knife or clever now boil/steam the corn in a little water don't make them drown just enough so they are cooked and tender leaving a little of the water on the bottom of the pan<br /><br />the salsa is made with 2 or 3 small green bird eye chillies a chunk of ginger like your thumb bunch of cilantro 2 or 3 garlic cloves and 3 to 4 heaped table spoons of finely dried coconut bits put it in your kitchen machine and pulse it till creamy and green and fragrant<br /><br />now mix the salsa in the big pan you cooked the corn in mix it well and the last of the cooking water should help it to become a sauce but just a tiny little water else you ll loose to much flavour add a little salt to taste<br /><br />now the magic is to cool the heat with half a can of coconut milk make sure you get it from a good grocer it should not have been sitting on the shelf for a year shake it well before opening the can so it becomes a homogenous whole again before adding half the tin to the corn green salsa mix<br /><br />to be authentic you now take a little pan and melt some ghee one tablespoon will do and add a small handful of curry leaves and a small spoon dark mosterd seeds the leaves will change color and shed their fragrance the mosterd seeds will pop then you know its enough now poor this CAREFULLY with the lid of the pot shielding you over the coconut corn green salsa mix check if it needs salt<br /><br />cook some basmati rice till fluffy and dry or any long grain rice of your choice and serve it together yum yum habibiAnonymousnoreply@blogger.comtag:blogger.com,1999:blog-5262628558438346351.post-80815878636448830482007-07-31T20:46:00.000-05:002007-07-31T20:46:00.000-05:00I love corn on the cob! Ahh, I could eat myself into a stupor.<BR/><BR/>I'm in the center of the Midwest so we have tons of both field and sweet corn. Everybody here prefers the peaches n cream (yellow and white ears). Myself, I prefer the white corn, it's sweeter.<BR/><BR/>I'm not much of a cook. Actually, I'm a horrible cook.
